Hey Hive! I hope everyone has been handling this quarantine/social distancing with ease and grace. Though I’ll be honest, even though I’m a homebody, I have felt that wave of anxiety and stress not being able to get out into nature as much or have the physical connection of seeing friends and loved ones.
This time at home however has allowed me to focus on so many of my self-care holistic hobbies. From yoga to art, I’m nurturing myself while the world heals as well. One of the things I love to do is cook, and this extra time in has really upped my culinary game. Now I actually have time for those 2+ hour meals, which means many fancy date nights for me throughout the week!
I’m not going to sugarcoat it, with the state of the world being a BIG unknown due to COVID-19, we’re not sure how long this will last. Thankfully grocery stores are still open and in supplies (well aside from toilet paper and hand sanitizers). Many people have been stocking up on dry goods and pantry items for that worse-case scenario. While I’m not big into hoarding these items, as this also is a fear-based mindset, I do think it’s smart to have some longer lasting shelf products for planning ahead purposes.
That being said, I’m sure we all don’t want to be dining on canned corn and bowls of rice. So, I’ve put together 21 meal ideas that use pantry ingredients so you can still enjoy cooking and eating during these stressful times.
