Living in the Midwest, we get the full range of seasons. Our spring came and went, and now we are experiencing the heat of the summer. It can get pretty hot here, sometimes even breaking 100 degrees! The summer is all about enjoying the outdoors. Barbecues during the day, and campfires at night. The nostalgia of popsicles and sun-brewed ice tea.
There is a certain uniqueness that the summer brings in terms of food. You either want something cooked on the grill, that is charred and smoky, or you want something cool and refreshing. It is my first full summer going vegan. Last year I was accustom to burgers and ice cream during these hot months, but this season, instead of missing these foods, I am super excited to try some new vegan recipes!
